WINEMAKING: After being run across the sorting table the whole berries tipped directly into the open fermenter.Wild fermentation began within a day. The fruit was hand plunged twice daily until dry after which is was pressed off to French oak two 500L puncheons and a single French oak 228L Barrique. A tiny blend of the 3 barrels showed excellent lively fruit, tight structure from the large format oak, while the single barrique barrel prided developed tannin structure and toasted flavours.
TASTING NOTES: Ink black with violet hues. A perfumed and spicy with blueberry, liquorice and nutmeg. Medium-bodied in style. The palate is concentrated and silky, with finely structured tannins, bright fruit characters, wonderful elegance and depth.
