Description
Bouchon Wines are producing our own label wines which are value for money wines showing good varietal and regional typicity. They will generally be sourced from our quality suppliers and will fill niches in our portfolio. Wines will eventually cover a range of varieties and wine styles from various regions, without being limited to single varieties or regions.
Cork Cutters performs the traditional (Old World) roll of Wine Negociant to provide exceptional value wines, matched to the best vineyards. 80 year old vines, Grenache, Shiraz, Mourvedre.
We have one rule when it comes to the vines and winemaking, Benign Neglect. Less is more. Less fertilizers, less pesticides and less intervention.

Tasting Notes
Blend of two vineyards both 80+ years old;
Grenache and bush vine Mataro from Seppeltsfield. Shiraz from Halletts Valley
All hand picked, naturally fermented in open fermenters for 10-12 days. Grenache and Mataro co fermented, Shiraz by itself. Blended after basket pressing and then transferred to older seasoned oak for 12 months before bottling without fining of filtration (eg Vegan Friendly).
Color: Deep ruby with garnet hues.
Nose: A complex nose of red fruits, spices, and earth. There are hints of raspberry, strawberry, plum, black pepper, and cedar.
Palate: The wine is full-bodied with a rich, velvety texture. The flavors of red fruits, spices, and earth are well-balanced by the oaky notes. There is also a touch of sweetness on the finish.
Overall: This is a complex and elegant wine that is well-structured and balanced. It would be a great pairing with grilled meats, game, or hearty pasta dishes.
Other notes: The wine was bottled unfiltered, which gives it a slightly hazy appearance. It has a medium-plus acidity and a long, lingering finish.
